Cheese Tuesday - Fromage Française

Last night began a new era in Cheese Tuesday. We all welcomed Matthew Helvitz as the new fromager, and though I sorely missed the music, the evening was a good time.









I began the evening with a daiquiri that was a great mix of pineapple and lime. The first course, a walnut fig tartlet with comté, paired well with the 2016 Alphonse Mellot "La Moussière", a Sauvignon Blanc from Sancerre, France.





"Scallops Saint Jacques" was up next, with roasted chestnuts and winter squash. It was paired with a bright 2015 Domaine Costal "Les Truffieres" from Burgundy, France.





Pork belly was up next, with fromage blanc, caramelized onions, young potatoes, and foraged mushrooms. It was paired with 2015 Anne-Sophie Dubois' Clepsydre Beaujolais from France.





NV Eric Bordelet, a Poiré Authentique from France, was picked to pair (pear?) with the cheese selection.
